Peanut Sauce
This is once again a Bette Hagman special from “More from the Gluten-Free Gourmet” and it is so good that my son swears it is the best of any that he has had anywhere!
Ingredients:
2T vegetable oil
14 cup finely chopped green onions (white part only) (I have substituted scallions or regular onion and it is great)
1 t finely chopped garlic
One 14 oz can chicken stock
½ cup creamy peanut butter
1 ½ T GF soya sauce
1 t lime juice
1 1/2t fresh grated gingerroot
3 to 4 drops Tabasco sauce
Instructions:
In a heavy saucepan heat the oil and saute the onion and garlic for 3 to 4 minutes until they are translucent. Pour in the chicken stock and bring to a boil over high heat. Stirring constantly, add the peanut butter, soya sauce, lime juice, ginger and Tabasco. Reduce heat to low and simmer for about 10 minutes, stirring occasionally. The sauce should thicken some. Serve hot in bowls suitable for dipping the sates. Makes about 2 cups.
