POMEGRANATE SPINACH SALAD

Original recipe from Bon Appetit.  This is a very beautiful salad and I love the hits of pomegranate.  Lovely.

Serves 4

  • 1 (10 ounce) bag baby spinach leaves, rinsed and drained
  • 1/2 cup walnut pieces
  • 1/4 medium red onion, sliced very thin
  • 1/4 cup alfalfa sprouts
  • 1/2 cup pomegranate seeds, or to taste
  • 4 tablespoons balsamic vinaigrette
  • 1/2 cup crumbled feta

 

I prefer a lemon dressing with fresh squeezed lemon juice, sugar or substitute to taste, salt and pepper and canola oil to taste.  Give it a good shake then test to your level of sweet/tartness.

I like to start with individual plates and place my spinach then layer on the other ingredients to an eye pleasing pattern.  Drizzle with the dressing of choice.  You can also mix the spinach and dressing in a bowl then place on the plate to ensure a good distribution.

 

 

TIPS:  If you microwave your lemon or lime for about 10   15seconds; you almost double the amount of juice that you extract - amazing!  Give it a try.
