Pecan Chewies

Ingredients

1 cup butter

1 cup granulated sugar

1 cup packed brown sugar

2 ½ teaspoons vanilla extract

2 large eggs at room temperature

2 cups flour

3 teaspoons baking powder

1 cup chopped pecans (I tend to be fairly generous with the nuts … I love nuts!)

 

Instructions

Preheat oven to 300 degrees F. Spray 9x13 baking dish with nonstick cooking spray.  Optionally you can line the pan with parchment long enough that the edges extend for easy lifting of the Chewies from the baking dish for cooling and cutting. 

(Note:  I do both as the parchment paper does make it easier to remove from the pan for a more accurate cutting into bars once cooled.)

Melt butter in a medium saucepan set over medium heat.  Once melted, pour the butter into a large mixing bowl and beat together with granulated, brown sugar and vanilla extract until well combined.  Mix in eggs until well combined, followed by the flour and baking powder.  Stir in the chopped pecans and pour into prepared 9x13 baking dish.

Bake until bars are light brown or about 45 minutes.  Allow to cool completely our of the pan before cutting and serving.
