Berry Lime Salad

 

This recipe came from “Simple Fresh Delicious.com” by Lovoni Walker.  This is an absolutely wonderful site and is also a ½ hour cooking show that I stumbled upon on the OWN Oprah network.  She (Lovoni) is absolutely wonderful and exactly as stated; simple, fresh and delicious!

The below salad is one that I make for dessert and serve with homemade French Vanilla Ice Cream or simply on its own.  Lovoni suggests making it with frozen fruits but just haven’t been able to do it – we are also pretty spoiled nowadays and if you can bite the bullet and pay the winter prices for fresh berries it is well worth the price!

I also like to mix up the below batch and let it rest on the counter for a couple of hours before serving.  Make sure everyone gets a good hit of the juices at the bottom of the bowl – absolutely wonderful sweet-tart!

Ingredients:

2 cups fresh raspberries

 2 cups fresh blueberries

 2 cups fresh sliced strawberries

 1 tablespoon finely grated lime zest

 2 tablespoons lime juice

 3 tablespoons granulated sugar

 1 tablespoon balsamic vinegar

 

 

Directions:

If fresh berries aren’t in season, then use thawed frozen berries. To thaw the berries, spread them onto baking sheets lined with paper towel and place them in the fridge to thaw. This recipe also makes a wonderful dessert just on its own with a cookie or pound cake or even served with ice cream.
